An ancient grain, einkorn contains gluten, but it does not bother me. They have not messed with this kind of wheat, which goes back 12,000 years.
Whole Foods sells einkorn flour and I made the banana bread recipe on the box. Some people say einkorn flour is expensive and, well, maybe it is, compared to other flours. However, you can make the recipe three times out of one bag of flour, which means the cost is not as high as you might think per loaf of bread.
I know spelt flour is a lot cheaper, but, in all honesty, if you were to buy banana bread from the store, we are talking the same price or higher. Besides, you have no control over the amount of sugar and chemicals they put in it.
Let me also point out that you can make it without eggs. I have used EnerG egg replacer and the recipe came out very well. In fact, there was no difference between the bread with real eggs and the one with egg replacer. Many people prefer to retain control over eggs or dairy in their baking.
As somebody who has not been able to have gluten for years, I feel very excited to finally taste it again without consequences. Einkorn contains the kind of gluten that I can handle, so I thought I should share this with you.
