Strawberry Vinaigrette

Strawberry vinaigrette over a simple salad

Just so you know, I pour it over steamed veggies, as well. I suffer from multiple food allergies, which restricts my use of cashew sauces, vegan mayo, or soy-based ranch dressing and the like. This strawberry vinaigrette has saved my culinary life in many ways. It is so hard to make food taste well when you cannot use onion, garlic, celery, lemon, etc.

Strawberry Vinaigrette

Ingredients

1/2 c water

1 c frozen strawberries

2 T apple cider vinegar

2 T honey

2 T oil

1/4 t salt

Directions

Place all ingredients in a blender which can handle frozen fruit. Blend well. Yields: about a cup.

A few comments for those who have not had a lot of experience with making their own dressing. First, these are my measurements and I like it like this. Feel free to experiment with other quantities and even other ingredients.

I found a bag of frozen berries mixed with cherries. Instead of just strawberries, I used this mix, and it was delicious. So that is where you use different ingredients and play around a bit with the taste.

Secondly, my blender has a specific button for frozen fruit being blended. You may need to just press your ON button and watch for the right consistency. Start on LOW speed and go to HIGH if needed.

Last but not least, honey is heavy and will stick to your blender. I would put the ingredients in the blender in the order above, to avoid losing the honey to the bottom of the blender, where it will stick no matter how much you blend.
